Caramelised Onion & Goats Cheese Flatbread
A Slice of Sweet & Tangy Heaven.
Goats Cheese + Caramelised Onions, a flavourful marriage!
Anything with goats cheese always feels extra lush. But the secret to this recipe is the caramelised onions. You have to ‘slow cook’ the onions in a pan for 30 minutes. Combined with tangy cheese and you have yourself the perfect flatbread topping.
Ingredients
Serves 5 Flatbread/ 10 pieces cut in half.
White Flatbread (I love this flatbread from The Fish Wives)
1kgs of Red Onions
Goats Cheese
Thyme
Butter
Method
Caramelised Onions Recipe from Simply Recipes
1. CUT all the red onions lengthways.
2. MELT a tablespoon of butter and some olive oil in a pan, once shimmering add in the onions.
3. STIR occasionally for 10 minutes, then add a sprinkle of salt and 2 teaspoons of sugar. Let it sit for around 25-30 minutes, only stirring to avoid the onions from sticking to the pan.
4. POUR some balsamic vinegar into the pan to add some extra colour and flavour. Cook for another 5 minutes.
5. PRE-HEAT the oven at 180 deg.
6. SPREAD butter on the flatbread, add a dollop of caramelised onions and goats cheese pieces. Drizzle with olive oil and S&P.
7. BAKE for around 15 minutes (until crust is slightly golden). Garnish with fresh thyme.
This flatbread literally lasted around 5 minutes before we ate it all! It’s a great starter dish but can also be served as a main (just double the ingredients).
