Stuffed Smokey Eggplant

This is one juicy dish which has become a Nonna Lizzie favourite of late. Roasted eggplants with extra protein, this is definitely a delicious, healthy and filling lunch. 

Ingredients

  • 2 large eggplants

  • Vegan chicken by (I use @garden_gourmet_pt, but you can also use normal chicken if you prefer)

  • 1 cup of quinoa

  • 1/2 onion (sliced)

  • 3 garlic cloves

  • Pine nuts

  • Garnish: Pine nuts & chopped up parsley.


Method

 1. PIERCE holes all around the eggplant with a fork. This will prevent it from bursting in the oven. 

 2.  ROAST the eggplant in whole for 45 minutes @ 180 degrees in the oven.

 3. COOK the quinoa by sautéing the onions and garlic first, then adding in the quinoa with 1 cup of water. Add paprika and S&P to taste. 

 4. COOK the vegan chicken in a pan as per instructions (around 7 minutes cooking time).

 5. CUT the eggplants in half fill each piece up with quinoa and vegan chicken. 

 6. GARNISH with pine nuts, chopped parsley and extra paprika. 

Optional to lightly toast the pine nuts in a pan with olive oil and paprika.
