Roasted Pumpkin with Harissa Fish & Quinoa
*(Yes, you may not see the fish underneath đŸ˜…).
This is a great sharing dish perfect for the festive season. It’s juicy, sweet, spicy and filling whilst leaving space for dessert.
Two things to buy which will help you save time:
·Pre-cut pumpkin cubes
·Canned quinoa.
Method:
1. Marinate pumpkin cubes in olive oil, paprika and S&P; bake for a total of 40 mins at 180 degrees.
2. Meanwhile, marinate white fish fillets in harissa sauce and olive oil. Place in a glass baking tray and add in baby tomatoes and cut up lemon pieces.
3. After 20 mins of the pumpkin in the oven, turn the tray around. At this point, add the fish tray into the oven. Baking for 20 mins.
4. Upon serving, heat up the quinoa in the microwave and place everything onto one big platter. Sprinkle fresh parsley on top.
