Homemade Gingerbread (like really homemade )

My lopsided gingerbread family gives me life. They are so imperfect, I find them endearing haha.

BUT they make for a great afternoon treat with a coffee.

If you’re great with the piping bag (clearly not me), you can make cute little designs on them. A perfect little neighbourly gift.

Check out @gimmesomeoven for the original recipe, although here’s what I did:

Ingredients:

-2 1/2 cups flour

-1/2 tablespoon ginger powder

-1/2 tablespoon cinnamon

-Dash of vanilla essence

-1 teaspoon of baking soda

-1 egg (whisked)

-1/2 cup brown sugar

-100g vegan butter (melted)

Icing: Vegan butter and icing sugar and vanilla essence

Method:

1. Mix all the dry ingredients together.

2. Mix the melted butter and brown sugar and egg in another bowl.

3. Mix the wet and dry ingredients together, preferably with an electric hand mixer. Although I just did it with a wooden spoon. Add in vegetable oil as you go to help hold the dough.

4. Make 5 balls and refrigerate for 1 hour.

5. Roll out the dough and use a cookie cutter to get your shapes.

6. Line a tray with baking paper and bake for 8-10 minutes until golden brown.

7. Wait 15 minutes until cooled before adding icing.
