GF Banana Cake w/ Vanilla Icing

I’m a few weeks into my third trimester now and I’ve been craving banana cake more than ever! 

I’ve tried making a gluten free and vegan cake, but it always turned out wrong lol. So instead, I make ‘healthier’ substitutes such as gluten free flour, coconut sugar, coconut milk; and still use essential baking items like eggs and butter. 

Here’s the ingredients I used for the below, but follow the accounts for the exact recipe ☺️.

Gluten-Free Banana Cake

Recipe inspired by Bake Gluten Free

  • 3 cups gluten-free flour 

  • 2 1/2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 3 ripe bananas 

  • 1 1/2 cups coconut sugar 

  • 3/4 cup butter, melted 

  • 3 large eggs 

  • 2/3 cup coconut milk

  • 2 teaspoons vanilla extract

Mix the dry ingredients first, then add the wet ingredients. Bake for 30 mins @ 180deg. 

Vanilla Icing 

Recipe inspired by The Belle of the Kitchen

  • 1 cup unsalted butter (softened)

  • 3 cups icing sugar

  • 1 tablespoon vanilla essence 

  • 1/4 cup coconut milk 

Whisk butter first, then slowly add sugar, vanilla essence and coconut milk. 

I topped the cake with some fresh strawberries to add a little sweet juicy flavour to the cake.
