Banana Caramel Cake
A delicious breakfast or afternoon tea treat. This lasted 1.5 days in my house!
I used a simple banana cake recipe and added my Caramel Slice caramel on top. The fresh banana slices and chocolate shavings on top are worth the added effort. Not just for presentation but for yummmyyy points too.
Ingredients
Banana Cake (by Best Recipes Australia)
▪️125g butter
▪️3/4 cup caster sugar
▪️1 tsp vanilla essence
▪️1 egg
▪️2 bananas mashed ripe
▪️1 1/2 cups self-raising flour
▪️1/4 cup milk
Caramel Icing
▪️395g condensed milk
▪️1 tablespoon butter
▪️Vanilla essence
Method
1. Melt butter, sugar and vanilla in a pan. Remove from heat.
2. Add smashed bananas and eggs. Mix well and slowly add the flour and milk.
3. Bake at 170C for approx 40 mins.
4. For caramel icing, melt butter in a pan and wait until it start starts bubbling.
5. Pour in condensed milk and mix until it starts to turn golden and bubbles. Add a few drops of vanilla essence as desired. Shouldn’t take longer than 7 minutes.
6. Spread icing on top of cake and refrigerate for at least an hour.
7. Add slices of fresh banana and milk chocolate shavings on top before serving.
