Phase 2 Begins, Let’s Eat!
Hallelujah, you can now have 5 visitors in one day!
In Singapore, we are now in Phase 2. After 3 months of lockdown, I was super excited to have friends over again.
We started at 3pm, which is the perfect time to get a little boozy at home, watch the sunset and still have the night to carry on with any other plans (for me that was walking the dog with my partner and then we ordered pizza).
Not going to lie, I was a little stressed in the kitchen cooking all the below. I did the dessert in the morning so I could leave it in the fridge and then started prep and cooking from around 1pm.
We Ate
Basil Pesto Hummus with Pita
Roasted Eggplants with Couscous (I added some Za’atar to the couscous this time)
Smashed Carrots (I forgot the Pistachio Coriander Pesto whoops)
Roasted Pumpkin with Caramelised Lentils and Parsley
Baby Spinach with Pickled Dates and Red Onions (Ottolenghi Recipe from Jerusalem)
Roasted Baby Tomatoes with Greek Yoghurt (Ottolenghi Recipe from Simple)
We Drank
Aperols (Tip: Make a jug, it’s easier to serve).
Rose
For music, I have a few favourites which I discovered in lockdown. We usually have Matoma playing in the house, he makes you feel like you’re in a day club (not a rave). He just has a great energy about him! I played these sets:
It was a great afternoon and I can’t wait to do it more often!
Cooking is a BIG effort, I won’t deny that. But Nonna Lizzie had been waiting all lockdown to cook and talk. So the 3 hour prep was worth it (1 hour in the morning for Caramel Slice, 2.5 hours after lunch for the other dishes).
