Baked Brie with Blueberry Coulis

Let’s get CHEESY baby

Once in a while I will over indulge in cheese… and this is absolutely worth it.

Melted garlicky brie, with sweet blueberry coulis and crunchy walnuts, nothing further needs to be said. This is a mouthwatering dish which will have guests fighting over the last piece.

It’s a great starter for a BBQ, or perfect with a glass of rosé on a Sunday afternoon. Enjoy!

Ingredients

  • 1 Brie wheel 

  • 2 garlic cloves (finely minced)

  • Rosemary 

  • Handful of blueberries

  • Handful of walnuts

  • 1/2 tablespoon of sugar

  • 1/2 lemon (juiced)

Method

 1. MAKE a wide circle in the middle of the cheese wheel with a knife. Cut and peel off the top layer (the skin of the wheel).

 2. CRISS CROSS lines on top of the cheese with your knife. Add in the minced garlic and rosemary into the groves of the the lines and drizzle with olive oil and pepper.

 3. BAKE for 30 minutes at 180 deg. After 15 mins, add the walnuts to the tray on the side.

 4. BLUEBERRY COULIS: In a pan, simmer a handful of blueberries, 1 tablespoon of sugar, a splash of water and 1/2 lemon juice. Let is cook for 10-15 minutes until the blueberries start bleeding. 

 5. TAKE a spoonful of blueberry coulis and add it on top of the brie wheel. Garnish with crushed walnuts and serve with crackers or bread sticks.

Tips

  • When you’re carving out the top of the brie wheel, only take off the skin. Keep as much cheese as possible :).

  • Finely mince your garlic so you don’t end up eating chunks of garlic.

  • Be patient with the baking time. You want to see the really brie melting before taking it out.

  • Make two wheels! This will go fast at your next dinner party.
