Lemon Herb Salmon Bake
A delicious family friendly salmon dish.
Shareable platters are great for serving groups of people and family. This salmon dish can be prepared in advance and cooked later. I prepared this at home, before we drove to my husband’s aunt’s house. We were visiting his Opa (grandpa), along with cousins, so I wanted to make a dish which was family-friendly and delicious!
Baking salmon looks more intimidating than it really is. It’s really just ‘clean-season-bake’. Here’s how I did it:
Ingredients
1 kg salmon fillet
200g of fresh herbs (eg. thyme or basil or even a mix of leftover herbs)
3 garlic cloves
1/2 onion
3 lemons
Vine tomatoes
Method
1. CLEAN salmon with cold water and pat it dry.
2. PIERCE 3-5 lines across the fillet with a knife, then rub olive oil and salt & pepper all over. Add more salt on the skin if you want crispy skin. The cuts help it absorbs the olive oil and vinaigrette.
3. MIX some cut up fresh herbs (I used all my leftover herbs from @vegobel, which was a mix of rosemary, basil, chives and mint), garlic, onion, lemon squeeze and olive oil to make a lemon herb vinaigrette. Add S&P and chilli to taste.
4. RUB all over salmon and bake for 25 mins at 190 deg.
I also added vine tomatoes to the tray, they become beautifully blistered after 25 mins.

Tabouli Pomegranate Salad
Buttery Asparagus
Lemon Thyme Mash
Roasted Carrot Purée (which wasn’t the best texture because we ran out of time lol).
This is a lovely dish to cook for your friends or family. It’s a beautiful dish which acts like a centrepiece to the dinner table! I hope you also have the courage to bake some salmon on your next dinner party :) xx
Tips:
I learned that you have to clean your fish as soon as you come from from the super market. Wash, clean and add some olive oil or lemon. I believe this helps keep it fresh … but I will have to double check with Chef Javier on this!
Because this was a 1 kg fish, I had the setting at 190 deg and baked it for 25 mins. If you have a smaller piece go for 170-180 deg, timing will depend on how many grams of salmon you have (just ask Google).
Check with a fork to see if the salmon is ready around 3/4 of your cooking time. You want it flaky in the middle and light pink in colour.
