Garlic Prawns w/ Pan Con Tomate

Ingredients

  • 8 large prawns

  • 2 ciabatta rolls (I used GF but you can use any)

  • 1 packet of instant rice (the lazy way of cooking rice lol)

  • 5 cloves of garlic

  • 1 large tomato (grated)

  • Butter

  • Garnish: Fresh parsley

Method

1. PEEL off the middle shells of the prawns. Wash and drizzle olive oil, S&P all over and let it sit.

2. SLICE the bread into long pieces, add butter on top and toast in the oven for 10 mins.

3. COOK rice packet as per instructions.

4. SAUTÈ 4 cloves of minced garlic in a pan with 1 tablespoon of butter. Add in prawns and cook for another 5 minutes.

5. RUB garlic on top of the warm bread, add tomato pulp on top. Drizzle olive oil and S&P on top.

6. SERVE prawns on a bed of rice with the pan con tomate on the side.
