BBQ Chicken Jalapeno Pizza

(Almost) home made pizza, the best mid-week treat.

Tangy, slightly spicy and cozy. This pizza recipe will make you want to rug up on the couch with your loved ones, including the furry ones. Making your own pizza doesn’t necessarily mean you have to make EVERYTHING from scratch. Sometimes it’s just about getting creative with what you have in the fridge and adding it to a pizza base. I used chicken breast and jalapeños which were on it’s way to rotting if I didn’t use them in the next few days.

I loved making this for our random Tuesday pizza night, hope you’ll enjoy it too!

Ingredients

  • 1 GF pizza base

  • 250g chicken breast

  • Jalapeños (approx 10 pieces)

  • 1/2 red onions (diced)

  • BBQ sauce

  • 1/2 tablespoon butter

  • Cheese (any hard cheese of your liking eg. cheddar, parmesan, manchego etc)

Method

1. CUT the chicken breast in strips about 3-4cm thick. Then marinate the chicken breast in bbq sauce, olive oil and S&P.

2. MEANWHILE, pre-bake the pizza base for 6-7 minutes, make sure to add a sprinkle of water and olive oil on the top.

3. HEAT up a pan with olive oil on medium to high heat. Add in the jalapeños and let them cook for 5 minutes until they start to blister. Once cooked, cut up into smaller pieces

4. SAUTÉ the onions in a pan with butter until caramelised. Add in chicken breast, paprika and mixed herbs, then stir for around 7 minutes. You want the chicken to be cooked 95%, not too overly done because you will still have to bake it on the pizza.

5. ASSEMBLE the pizza by starting with a layer of bbq sauce, then adding the chicken, jalapeños, some red onion and grated cheese.

6. BAKE for another 10 minutes. Garnish with fresh parsley and optional for extra cheese.
